Recipe - Sea Bass with Pesto
This is a relatively simple recipe that my wife fixed for me last night and, me
oh my oh, was it good! Of course, it was also good for you as fish is the
undisputed kind of the fat and protein world.
To do this you will need the following ingredients:
2-3 Sea Bass filets
Pesto
1-2 Medium Tomatoes Diced (but not finely)
1 Onion Diced (but not finely)
I recommend buying the pesto at a health food or more upscale supermarket.
Pesto is essentially Extra Virgin Olive Oil, garlic and fresh basil, but the
problem is that the fresh basil is usually astronomically expensive in a regular
grocery store. In other words, you might as well just buy the pesto
pre-made - it'll probably be about the same price as the basil!

Of course, you can use whatever fish is available, but the Sea Bass was the
perfect combination of somewhat fatty without being overly strong or "fishy" in
flavor. Just cover the filets with the pesto and garnish with the tomato
and onion in a baking pan and you're done. Well, you do have to cook it at
350 for about 45 minutes.
But it will take you all of ten minutes to put this all together and it is good!
CAUTIONS:
Fish and
Olive Oil are perfect for
once or twice a week. I do not recommend them more than that.
