This dish is easy to make and all the spices and ingredients are easily
available. There were a few spices that I was missing, but I was able to
get them at my local grocery store without any problem.
My family loves this recipe and, yes, I've got some picky eaters under my roof,
so another benefit is that you should be able to fix this for everybody.
TIPS and HINTS: You can use almost any vegetable that you like, although
the recipe specifically calls for sweet potato and eggplant as the base and both
work very well with the spices. Personally, I would recommend precooking
some (brown) rice and addiing it to the mixture to boost the calories a bit keeping im
mind that brown rice (and the spinach) will be good for erectile strength. If you do decide on the
sweet potatoes (or yams), then I would recommend cutting the slices fairly thin.
I made the mistake my first time of cutting rather large slices which took quite
awhile to cook in the pan. It does use a little fat for frying in the pan
- and as you know I recommend canola oil - but this is relatively giving it an
