Recipe - Vegetarian Gumbo
Those cajuns know what they're doing: this recipe from the deep south -
sans meat in this case - serves up a nice combination of vegetables and
spiciness that will do nothing but help your arteries. Consider this
Vegetarian Gumbo Recipe. Of course, the original Gumbo is loaded with
various meats such as sausage, but I recommend against that for the sake of your
arteries. This dish is actually very flavorful and one thing that I like
about it: it satisfies the appetite quite nicely. Because it is
mostly vegetables, it is decidely low cal yet fills you up.
TIPS and HINTS: I recommend that you use canola oil - it's the
easiest on the arteries assuming it hasn't been sitting in your pantry for a
couple months - and I would also recommend that you do ratio of 1:1 for the roux.
Roux is an easy-to-make mixture of (hopefully whole) wheat flour and oil and the
recipe prescribes 1/2 T oil to 1/3 T wheat. Again, I made it 1/3 and 1/3
and everything turned out just fine. You MUST stir the roux constantly, by
the way, or it will burn.
This recipe is fast and easy-to-make, although it does take some vegetable
chopping in the beginning. But then what good recipe doesn't take a little
prep work, eh?
