My diet is not perfect but I wouldn't say it's bad. I'll eat a lot of sandwiches (like footlong chicken breast from subway), burgers/fries, pasta, chicken, sushi, etc. I don't drink soda or fruit juices. Generally drink coffee and water. Started drinking pomegranate juice everyday. Very little green leafy vegetables and not a ton of fruit (ie: 1 banana a day). I guess I could improve my diet. I'll PM you for the book.

What you're describing is the typical Western Diet. I'm not trying to be hard on you, but just giving the facts. The good news is that the pomegranate juice - assuming it's 100% pomegranate - will be very protective.
I won't go on and on about that, because food is religious to almost all of us - I'm one of the few people that eats kind of like a chemistry experiment! - but here are a few teaser points to keep in mind:
--Chicken is packed, due to modern poultry practices, with arachidonic acid, which is a key inflammatory "messenger". It's a building block and can lead to increased inflammation, which is the root of all evil.
--Modern beef is a joke compared to wild game. Wild game is almost always very low in fat and high in omega-3's. Due to modern livestock practices, beef is the polar opposite. Beef also has many other problems, but one of the huge ones that was just discovered a few weeks ago is that it is high in carnitine, which alters the output of ones' gut flora and hammers your arteries. By the way, I've got nothing morally against eating humanely-killed meat. But you've got to realize that they've really bastardized our food supply in this area and the carnitine aspect of beef is likely very dangerous.
Now, all of that said, I'm going to be honest here: you can probably eat tons of modern meat for another ten years before it starts to affect your erections if you simply start eating more fruits and vegetables and continue exercising a lot. The nitrates and many other compounds in plants will boost your nitric oxide significantly and get you "over the hump". You should still have a lot of buffer in your system.
But I would encourage to "not do as I have done" and keep those arteries nice and clean and supple. Remember: if the heart is happy, everybody is happy.
To answer your question, most men feel the benefits within a few days. Generally, men who go on a Low Fat/Mediterranean/Vegetarian/DASH Diet (with supplemental protein if needed) experience solid results within just a few weeks. And the good news is that you usually begin to slowly feel better for months afterward.
